Ingredients
· 3 teaspoons extra virgin olive oil
· 300g lean pork fillet, thinly sliced
· 2 cups broccoli florets
· 2 medium carrots, julienned
· 1 small red capsicum, julienned
· 15 green beans, sliced
· 1 x 270g soba noodles, prepared
· 2 teaspoons gluten-free sweet chilli sauce
· 2 teaspoons lime juice
· 1 cup bean sprouts
· ½ cup coriander leaves
· 2 teaspoons black sesame seeds
Method
Step 1: Heat a large frying pan or wok over high heat. Add 1 teaspoon of oil and cook half the pork for 3–4 minutes until browned. Repeat with remaining pork and set aside.
Step 2: Add remaining oil to the pan. Cook broccoli, carrots, capsicum, and beans for 3–4 minutes until just tender.
Step 3: Return pork to the pan along with prepared noodles. Add sweet chilli sauce and lime juice, tossing to combine and heat through.
Step 4: Divide into bowls and top with bean sprouts, coriander, and black sesame seeds.
To serve
Serve immediately while warm, when the vegetables are crisp and the flavours are fresh.
